Turkey Apple Brie

I know this is a bold statement – but this literally is the best sandwich. Please, allow me to take you on a walk down memory lane. It’ll be quick, I promise.

Back in the early 2000s, I worked at an independent shoe store. It was my absolute favorite job, still to this day. I was a cashier and would spend my day journaling, writing, and working with some of the absolute best people I’ve ever met. I could write a mini-series or short stories about them. It was very relaxed.

Anyways, for my birthday one year we ordered lunch from a restaurant I had always wanted to go to – the London Grill. It was a block away and I ordered a turkey sandwich and peanut butter pie. My life was changed.

Every occasion I would eat at this restaurant and order this sandwich- lunch or dinner, it didn’t matter. Unfortunately the restaurant closed – but my love for this sandwich has lived on. I had to recreate this masterpiece.

Recipe

  • A really delicious bread – I prefer a sour dough bread (sprouted sour dough from Trader Joe’s is a great choice!)
  • Turkey
  • Brie (I recommend cutting the rind off)
  • Green apple – sliced thinly
  • 2-3 Tbs of mayonnaise
  • 2-3 tsp of curry

Preheat the oven to 350°. Place two slices of bread on a cookie sheet. Top one slice with turkey, followed by the Brie. Place the cookie sheet into the oven and bake for 10-15 minutes – until bread is slightly toasted and cheese is melted.

While the sandwich is cooking, mix the curry and the mayonnaise until well combined.

Once your sandwich is toasted, remove and spread the plain piece of bread with your curry Mayo. Add the apple slices on top of the turkey and Brie. The cold, tart, crisp apple cuts through the rich Brie and makes a delightful meal.

Kim Hack: I place the pan into a cold oven. Turn the oven on and allow it to heat up. After the oven is preheated, I allow it to sit another 5 minutes and remove the sandwich. It gets the perfect toast that way!
