Lemon Lavender Scones

Can you believe that Mother’s Day is only a few weeks away? This year is going by so fast! To celebrate, we’re hosting brunch for my mother-in-law. I wanted to do something extra delish and decided to make some lavender lemon scones. Scones are not as scary as they seem, I promise.

Here’s what you’ll need to make these delicious scones:

For the scones:

  • 3 cups of AP flour
  • 1 tablespoon of baking powder
  • 2 tablespoons of sugar
  • 1 stick of cold, unsalted butter cubed
  • 1 cup of heavy cream
  • 1 egg lightly beaten
  • Zest of 1 lemon
  • 1 tablespoon dried lavender

Egg wash:

  • 2 eggs beaten
  • 1 tablespoon of water

Glaze:

  • 2 cups of powdered sugar
  • 3-4 tablespoons of lemon juice

Start by preheating your oven to 350 degrees and line a baking sheet with parchment. Toss the flour, baking powder, sugar, zest, and lavender together in a large bowl.

Now, let’s get messy. Mix the cubed butter into the dry ingredients with your hands. The flour-butter mixture will look like little peas. Make a well in the loose dough and mix in the heavy cream and egg. Mix by hand until well incorporated. The dough will be shaggy.

Turn dough onto a floured surface and knead until smooth. Form dough into a 1-inch thick circle and cut into triangles. Transfer to baking sheet and brush with egg wash.

Bake until golden brown, about 22 minutes. Allow to cool prior to glazing.

To make glaze – mix the ingredients together.

Serve warm or at room temperature. The scones are best eaten right away.
