Boiled Apple Cider Bundt Cake

Fall is officially here, which means sweaters, pumpkins, soups, and all things apple. And as you know, there’s no better way to capture a season then cake.

The inspiration for this cake came from King Arthur’s boiled cider and King Arthur’s vanilla bundt cake recipe.

Ingredients

Here’s what you’ll need for the cake:

  • 3 sticks of unsalted butter
  • 1 1/2 cup granulated sugar
  • 6 large eggs
  • 2 1/4 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 3 cups ap flour
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon
  • 1/2 cup boiled cider
  • 1/2 cup milk

Here’s what you need for the glaze:

  • 2 cups sifted powdered sugar
  • 1/2 cup boiled cider

Directions

Preheat the oven to 350° and generously grease your Bundt pan. Measure out your flour and set aside.

Beat the butter and sugar until pale and fluffy. Add in the baking powder and salt. Mix well.

Beat in 3 eggs one at a time. After adding in the third egg, mix in 2 tablespoons of flour. Add in your fourth egg, followed by 2 more tablespoons of flour. Follow this pattern.

Add in your vanilla, cinnamon, cider, and milk. Mix well. Add the remaining flour. Mix until smooth.

Pour batter into peppers bundt pan. Bake for 50-60 minutes. Allow to fully cool.

Mix glaze ingredients and pour over cooled cake. Enjoy.

Store cake in air tight container or freeze.
