Thanksgiving Sides

Holy smokes – Thanksgiving is 2 days away. Don’t fret – there are some really easy sides you can make last minute.

You say potato, I say a must side

Quick fact: you can peel your potatoes early (a day before… like tomorrow…. the day before Thanksgiving) and leave them in water. This is wicked helpful.

Quick Tip: Cut your potatoes small and put them into a crock-pot. I know what you’re thinking, that’s a bunch of crock… but seriously, it works. Add some milk, butter, and slow cook them all day. You’ll be able to smash them in the crock and serve to guests.

This also freeze up some precious oven space.

Salad: the new winner of the sides

This may come as a surprise, but an autumn salad is a wonderful reprise from your heavy meal.

Here’s what you need:

  • Squash (roast in your oven: low and slow in the oven)
  • 1 cup cooked quinoa
  • 1 apple, diced
  • 1 thinly sliced green onion
  • 2 cups spinach
  • 1/3 cup dried cranberries
  • 2 tbs toasted slivered almonds
  • 2 tbs pepitas (pumpkin seeds)
  • 2 ounces blue or goat cheese

Mix the above ingredients together and dress with:

  • 1 cup apple cider
  • 2 tbs apple cider vinegar
  • 2 tbs minced shallot
  • 1 tbs dijon mustard
  • 1 tbs maple syrup
  • 2 tsp extra virgin olive oil
  • Salt and pepper

Super easy AND delicious.

Pumpkin soup is life

Here’s the bummer about making pumpkin dessert from a can – you always have leftover canned pumpkin. And then it sits… until it goes bad, and food waste is the worse.

So – use that canned pumpkin and turn it into some delicious soup. Mix it with chicken stock, spices (garlic, paprika, onion), and maybe hit it with some cream.

Top it with pepitas and blue cheese.
