Bourbon Apple Pie

Bourbon – um yes.

When Matt and I completed our first 5k (The Great Pumpkin Run!) this last weekend, we received bags of apples for finishing the race. What’s a girl to do with so many apples? Obvious: make pie.

Here’s the recipe:

5 tbs butter (this is already the best recipe)

1/2 cup brown sugar

1/2 cup white sugar

1/4 cup corn syrup

3 shots of bourbon (or Whiskey!)

1 tsp nutmeg

2 tsp cinnamon

8 cups of apples – chopped

Melt your butter until it’s a light brown. Add in sugar, corn syrup, and bourbon. Mix and dissolve sugar. Add spices and mix well. Add apples and cook until softened (not mushy).
Add to pie crust and bake 350 for 45 minutes.

I decided not to make the pie, but instead freeze the filling for Thanksgiving. If you want to make the pie immediately (don’t blame you!), just use your favorite crust. I would recommend baking the bottom crust for 10 minutes ahead of time. If you want to make ahead – allow mixture to cool and add into a freezer bag. This can remain in the freezer for 2-3 months.

TBH – Vanilla Jim Beam is EXCELLENT for this pie. And for drinking. Bakers get to take shots too.
